do you need to repress the "keep warm/cook 5 mins more" button to do additional cooking, or just let the seafood steam inside an additional 15mins? Is this done towards the end to avoid overcooking? I'd have thought you used shrimp shells or dried scallops to make a stock for a more aromatic/flavorful rice
