    Hi Miranda, I also do beach body on demand. I’ve done quite a bit of programs but still need to try that one. I love them and it’s a pretty decent value. I think the cross training really helped my runs. I tagged you a couple of days ago on my IG post. I did the 5K challenge you had. Not sure if I tagged it right but I got it done. This weekend coming up I’m doing the half marathon. I live in Canada and it’s colder and snowy. This weekend will be a bit warmer though. Love your videos!

    I make a similar recipe for thai butternut chickpea curry on the stove top. Love the idea of throwing it all in the instant pot though! Definitely going to try the beans and corn cream sauce!

    I eat late around 9-10. Go to bed around 11-12. Up around 7 so it works. Hubby eats around 5-6. I delay my food for the day though. Typically have first meal around noon. Second/snack around 4-5. Eating later seems to be helping my hypoglycemia. 🤷‍♀️

    I am in weight loss mode still. Been almost a year. Now down to that 5-10 pounds. Might not happen. That’s ok. Focusing on fat loss and fitness now. Diet is good. But I don’t eat overt fats except occasional chia for omega 3 and couple Brazil nuts for selenium. Still tracking on Cronometer. I’m a data lover!

    This month marked 21 years meat free for me. Woot. Went vegetarian in Feb 2000. Don’t remember the date. Vegan will be 11 years this May. Pretty much been HCLF the whole time vegan. Initially lost 70 pounds. Gained back about 30. Yo-yo those off and on last 6-7 years. Committed to that veggie life and been happier than ever with my food past year. 😸

    I love how quick and easy your recipes are and especially the ones for the Instant Pot. I've been vegan for about 20 years, I started with raw vegan in 2000 for approximately 2 years but then started adding in cooked, so now I'm vegan whole food plant strong, I'm turning 70 this year and am in great health. I eat dinner early, usually finished by 5:30 and don't eat again until around 11:00 am. Your videos are very inspirational, thank-you 🙂

    Congrats on your 1 year anniversary! I’ve been vegan for 10 years, my son has been vegan since birth and he is now 9 😱 and my hubby has been vegan for 5 years. We eat all the vegan foods, I tried high carb low fat and I missed my mock meats and fats 🤣. Love your recipes and channel, thank you for sharing with us!!!

Congratulations on one year of being vegan. Being vegan is my goal and I’m using “The Starch Solution” book as my starting base.

    Really good to see this video as I'd been hanging out for this one especially, keen for more instant pot videos/recipes as I've only had mine less than a year so am still sort of at the experimenting stage with it.
    I do agree that cooking pasta from dry gives unsatisfactory results. Like you said the texture is weird, sort of chewy and starchy in not a good way, so while it means a bit more dishes it does taste so much better to cook it in a pot of water on the stove so that it can be drained, and then add it to the dish afterwards.
    I'd like to get good results from just throwing everything in together but it never works for me

    Also budget tip. Get the full fat coconut milk. When you get lite you’re paying for water. You might as well just add your own water. ❤️

    Hi Miranda! I just subscribed to your channel. I've watched a few of your videos and I think your awesome! I would love to reduce my meat consumption and be healthier. I loved all these recipes. I don't have an instapot I guess I could do crockpot? I also have issues with dairy so milk alternatives are great for me! I love your energy and you are such a beautiful person inside and out. Thank you for sharing!
