Last year's doctor visit indicated that I was pre-diabetic (though after giving up the two pieces of toast with my early morning coffee I dropped 15 pounds, which may have put me back to a normal A1C blood sugar level), so I put the peeled oranges into the blender to include the pulp. I put in about 2-1/2 TBL of honey into the orange filling; the oranges were from our tree (South Los Angeles) and were not too sweet. Since my last name is French, I added a "French-measured" tablespoon of butter and substituted fresh raspberries for the cherries. (Butter is normally added to lemon filling, so why not!) Because I had unsweetened coconut on hand, I put the coconut and some coconut sugar into a mini food processor to blend the two. The dessert was a big hit. The mint and raspberries made a tasty combination.
