Amazing meals! Going to try the Shepard's Pie and that soup. The remaining ingredientss would be a great salad or omelet, too. The soup looked as though it was very hearty.
If you cut the meaty back portion away from the thigh end, you can get an additional 2 meals out of the leg quarters. Boil them for chicken and rice or dumplings. Boil and de-bone for a chicken pot pie. So easy on the budget.

You could add some black beans and corn and a bit more seasoning to the shepherd's pie to stretch it more. Black beans would be good in the salsa chicken also.
I would cook my chicken and then remove it and cook my rice in the juice, but really you can’t go wrong however you make your chicken and rice. Looks delicious!
Is that brown rice in with your chicken and rice casserole
I think the Mexican shepherds pie would be really good with macaroni and cheese on top instead of mashed potatoes

I wish Walmart in Canada had those bags of leg quarters. Can someone else in Canada tell me if we have them here and I just haven’t been able to find them? I know they won’t be as inexpensive as they are in the US but it would be great for meal planning. I almost never cook my rice in whatever dish I’m making. I have two exceptions which are very specific casseroles, but other than that I prefer to have my rice, and then put whatever I made on top of it.and I like extra sauce. 😁

Rice separately. I buy those 10 lb leg quarters all the time. 5 meals for 3.
I wrote down the recipe for the Southwest shepherds pie. I look forward to trying it.
I love making the chicken and rice bake. I use lemon pepper seasoning and add canned corn to it. And I dice the chicken up before I bake just so it's easier to portion out.
Could you use boneless chicken breasts in these recipes and the cooking times be the same?
For the Salsa Chicken, I would definitely cook the rice separately…and some Parmesan cheese would be yummy in the soup…
