    Great job! I really appreciate it when you buy fresh foods and dry wholesome staples. This menu was a bit limited, but I understand your budget constrains. If you bumped up the budget a bit, I would recommend buying rice, more fruit, plain yogurt Or two, yogurt, and more vegetables. Potatoes are cheap and full of nutrients. Make a stir fry. Your stock was anemic! Girl, add a potato, celery, more carrots whole onion, mushrooms, salt and pepper. One thing, when packaging on dry goods says protein…this is not useable or considered a complete protein. Quinoa is the only grain that is a complete protein. Beans, corn and rice are good, but you have to consume so much to get the protein you need! It is critical to know the proper combinations and the correct ratio. If you add eggs or a milk product or even nuts or seeds…..you can complete the protein in the right ratio, so you do not need to eat an overload of carbs.Soaking of legumes (2 days) and fermenting of grains is very important to help make them safer and more nutritious and digestible.

How can anyone do that if one onion is supposed to last for an entire week and multiple recipes? There was a total disconnect between quantity purchased and usage. Not at all helpful.

    Wow, where are you? I just spent $2.39 ($1.99 with digital coupon) at Kroger yesterday for a carton of 18 eggs! Normally Aldi is cheaper than Kroger. Crazy that the cage-free is cheaper than the regular eggs… wonder if that was a misplacement on the shelf?

    Eggs in Aldi is under $2 and cub food 30 eggs is $ 4.99 . I thought you just got $20 to shop , you sure did much more than that . Why don’t you make your own salsa 😡we diabetic can’t have your recipes because of lots carb ( no beans flour , pastas , rice 😢)

I do a similar budget/meal plan from Aldi often but add a can of diced tomatoes (for soups or loaves), peanut butter (for sandwiches, oatmeal, or mixed with a few pantry staples for a peanut sauce), and whatever the cheapest lettuce/cabbage (for sandwiches, soups, and salads) I can find. Also, I grab another banana or two to make 2 ingredient oatmeal/banana cookies. Can also add peanut butter to them for a healthy treat. Adds some more options, veggies, and protein to the meals for under $25 a week.

I have a set kind of like that which are by Wolfgang Puck. If yours is indeed silicone, did you know that you can bake in them? I love baking bread in them using the smallest one for just me makes the cutest little loaf!

    I laughed when you checked the eggs. I do that too but I jiggle each egg to make sure none of them are stuck. Because sometimes it could be cracked on the bottom where you can’t see. People look at me funny because it looks like I am counting the eggs. 😂

    I need to get some lentils to make more nacho lentils. I did a while back just cooked them and then added taco seasoning like I would if I were using meat. Then I put it in containers and froze it. I usually do that with meat but we have used it just the same. I take one out of freezer and use it for nachos or taco salad or add refried beans (also homemade from freezer) and make burritos.

    They do make Vegan Worcestershire sauce. I’ve found an affordable one at Sprouts. And from what I remember, I believe Ralph’s store brand is also Vegan. But a good bbq sauce is a great substitute in bean patties or loafs. I’ve used it in both and both are tasty. Thanx for sharing such diverse recipes! I eat a mainly a vegan diet and hubby loves his bbq lol So it’s good to get ideas for both. But he eats Vegan meals with me, which makes it easier.
    I call most of my Vegan meat dishes by their traditional names lol If you know me, you know it’s not real meat. I do call my loafs lentil or bean loafs bc it’s less of a mouthful lol But I’m definitely not uptight about names. It’s food, it tastes good, that’s all that matters 😂
