When I was in culinary school I won the sophomore contest for best sandwich using pita pockets. I called it Hercules Power Pockets. (This was pre-vegan) Basically it's a summer friendly sandwich cook ground sausage and near the end lightly sauteed zucchini & yellow squash with basic herbs like oregano & thyme, etc. Spread pesto inside pockets then stuff with mixture and topped with mozzarella cheese and diced fresh tomatoes and green onions. This would work with plant-based meat instead of sausage (like Pumfu sausage, it's so good). And that VioLife cheese. *which yes, you can freeze it. Chao is the best vegan cheese I've tried.

Those Late July chips are AMAZING! The bacon habanero flavor is awesome too. (definitely a "sometimes" food though)
