    Since I need to avoid pork (health issues), I use to substitute bacon with turkish smoked beef. Very firm, with a fantastic smoke aroma.
    I even use that in italian onion soup (which calles for pancetta). A little goes a long way!
    I'll surely try the trick with the napa cabbage. In many stir fry recipes.
