    Dear Doug, Thank you, Sir! Not a lot of Instapot mini recipes out there, and this one's so good.
    Yes, I did like Doug did and used THAT much seasoning to rub into the meat. Some differences — didn't have any beef broth, so I poured off the juice after browning, then added some red wine from my glass and some chopped garlic from a jar. Mixed that in on Saute heat for a minute, then added a can of chicken broth, a chicken broth cube, a can of water, and more wine. Everything else the same…bay leaves, oregano, all that … did natural vent for 10 minutes to cook more because I just had a tooth pulled and I need everything soft and peaceful. Daaayum, this is some amazing flavor. Best beef broth ever. The veggies weren't too mushy. The next time I have a date — if I ever find one — I'm gonna make this for him.

    I like my stew a bit thicker so I take everything out and put in a covered bowl and bring the liquid up to boil on sauté and take some cornstarch and water and mix in while boiling. Then shut off and add everything back in.
    Closer to "dinty Moore" type consistency of the stew

    Ok. If I use frozen normany blend veggies, would I still cook it at the 12 mins? Or do I cook it at 12 without the veggies and then add them at finish and let the warmth soften them, instead?

    You use spices I have never heard of – WOW and so many blended seasonings. I try to use fresh onion, garlic and (not table salt) Himalayan Pink salt or Celtic Salt is much better (includes minerals that we need) and adds great flavor too. Blessings

    Instant pot reminds me of when the microwave first came out. People were saying it did ANYTHING…but it really didn't. I've had an instant pot for almost a year now and I'm really disappointed. It won't do much more than my slow cooker. Yes, it's fast but I'm retired and I don't need that. The sautee setting is not really hot enough. I can do better on the grill. With my slow cooker I can at least monitor what's going on and adjust accordingly. The microwave heats water, melts butter and reheats leftovers. The instant pot is a pretty decent rice maker, especially for brown rice. That's about it.
