    Great effort for a worthy subject. I dunno why people are so averse to drinking straight whey. I find it pleasant…and if it's good enough for Little Miss Muffet its good enough for me. Gonna work up some Ginger beer using whey and also use it to make Kvass.

    If you know how to make wine or mead you can use whey in place of water (if you add say 2 lbs of sugar to mix with whey to make a gallon (US) and then add a pack of wine yeast (or even yeast you use for making bread) you can make a wine that will have a potential alcohol level of about 12%. In the north of Scotland a version of this was made indigenously and was known as blaand (as in blonde, not bland). In my opinion blaand made from acid whey tastes better than blaand from sweet whey , but if you add fruit (say 3 lbs of berries or you use honey in place of table sugar, sweet whey works well).

    This wine or mead will taste slightly sweet because of the lactose but if you add some lactase tablets you can ferment the milk sugars as lactase converts lactase into glucose and yeast LOVE glucose. One last thought.

    If you are using sweet whey (cultured with bacteria rather than acidfied with lemon juice or citric acid) the whey can continue to acidify (takes about two weeks to ferment fully) so you might want to boil the whey as you add the sugar and allow it to cool to room temperature before you add the yeast.
