Thank you so much for the updates! I'm excited…I've already been loving the butter buns but realized I made a mistake and added the acacia fiber with the egg white blend before whipping. Looking forward to trying it the correct way. This may be a dumb question, but do you have a favorite loaf recipe that includes acacia fiber? With or without powdered yolks and/or butter?

This looks so good! Can you tell me if it is necessary to use the allulose? I don't like bread that has a sweet taste to it. Do you think I could leave out the allulose and still have the recipe turn out alright?

Your recipes are spot on! Been buying a lot of your favs on Amazon. Just had a few questions about this new recipe:

Is it good for a hot dog bun? To make it dairy free can the Butter Powder be replaced one for one with Olive Oil Powder in this recipe? Last question, can the Olive Oil Powder replacement recipe be used for a pizza crust too?

Ok. You might need a Nobel Prizeā€¦ EVERY prize, in fact! lol am SO excited to try this!!! My husband is enjoying the sitcom that plays out in my kitchen, as I try and try and fail and fail at keto bread. I think heā€™s amazed that I keep trying. He usually cleans the kitchen TWICE when Iā€™m cooking/baking. lol. (Is that not the best, though?! lol šŸ˜³šŸŒŖšŸ„°)..

Soā€¦. While people are asking about other ingredients, have you done bread (or other things) with cottage cheese? Tofu? Parmesan? I donā€™t like the stinkier Parmesan, but thereā€™s one that comes in small, clear tubs (here, in NS) that smells so much like bread. .

Thank you for doing this work and sharing it. Honestly, keto and YouTubers have literally saved my life. I have a heart defect that doctors said would require a transplant (thatā€™s where this thing usually progresses). My odds of dying increased 6% per year (starting at 53 or so). Amazing how fast those 6%s add up, by 60. I lost count of how many cardiologists I had. I was getting nowhere with weight loss, at the time, until I got into keto.

There are always so many awesome ideas to try, and delicious treats, Iā€™ve felt no need to ever quit. My husband has been loving the ā€˜surgeā€™ of baking, and itā€™s great having him do it with me. Soā€¦ after lots of heart medicine and a pacemaker, I was not getting worse, but just ā€˜level.ā€™ Within a few months of keto and my treadmill, my next appointment at the Transplant Clinic, my heart and fitness were SO improved, I would no longer even need to be a patient of the Heart Transplant Clinic! Lots of happy hugging and tears that day! šŸ’–šŸ’—

Weā€™ve been kinda drifting off of it. Heā€™s been lots less strict all along. Iā€™ve been on a ā€˜carb benderā€™ since Christmas. And YOUR recipes, that Iā€™m so excited to try, have already brought me back to the commitment I canā€™t afford to lose.

Sorry this went on too long. Did I mentionā€¦ THANK YOU! šŸ˜šŸ’–šŸ„°

Help please! I have been making these protein breads weekly the last 4 weeks (recipe with only arrowroot and egg yolks powder) until this week, the egg white mix doesnt seem to whip up. Twice i had soupy egg whites which i cooked up as crepes instead… may i know what might have caused it? Ingredients were all from the same packets. I really have no clue…. thanks. I use the same kitchen aid machine as always.

Thank you for posting these recipes. Iā€™ve made the recipe 4 times. Only the first batch was delicious. I think it must have something to do with the weather. Nothing else was different. That first time they were so delicious Iā€™m determined to keep trying. Thanks again for posting these, youā€™re a lifesaver!

Hi Nili. I made these buns for the second time today. The first time I used fresh egg whites and today used egg protein powder and followed the recipe as written. Neither of the rolls turned out soft and ā€œfluffyā€. They were dense and dry. Iā€™m wondering if it has anything to do with the xanthan gum. Not anxious to make again. I did make Wendyā€™s buttermilk bread and buns and did have good luck with them. I know you are dairy free so wonā€™t be able to have them. Just thought youā€™d appreciate the info. Thanks for all you do. I love seeing you and your beautiful kids. ā€¦..Barb from Buffalo

So for the herbed dinner rolls, I could use this recipe and pour the herbed butter on top?
My first try at Butter Buns came out beautifully but they deflated after cooling and got a little bit chewy.

Thank you for this recipe. Is there a difference between the egg white protein powder (Now Sports or Bulk Supplements brands) vs the Judeeā€™s Dried Egg whites? Aside from the carbs, I assume they are the same thing, maybe?

I've been adding 2 Tbsp of oat fiber instead of the arrowroot powder or acacia powder only because I found several bags to use up in my pantry. I really like how the buns turn out with the oat fiber. I also like to add caraway seed and chopped green olives occasionally. Yum! Instead of making a big container of base, I measure out the dry ingredients for several batches in either individual little storage containers or baggies. Then I know each one has the exact premeasured ingredients. Then I only have to measure out the butter powder and egg yolk powder when the time comes. I will have to give the gelatin a try now. Very interesting. Thanks!

This recipe sounds great! I was wondering, have you tried adding the buttermilk powder that Wendy, uses? I bought that and now, Iā€™ll get the acacia powder. Somewhere, in all this kitchen science, we will have bakery quality buns and bread. Also, do you keep your little jar of yeast in the refrigerator? I love how you and Wendy, come up with evolutions of this bread. You girls are the best and talk about the genius of each other. That is so refreshing, in this age of division. Iā€™m with you both, as I think others are. You girls stride and shoot for getting a pinnacle recipe for the benefit of our community. I love my kitchen scientists!! My love to you and your family!!! šŸ˜ā¤ļøšŸ˜˜
