Thank you so much for the updates! I'm excited…I've already been loving the butter buns but realized I made a mistake and added the acacia fiber with the egg white blend before whipping. Looking forward to trying it the correct way. This may be a dumb question, but do you have a favorite loaf recipe that includes acacia fiber? With or without powdered yolks and/or butter?

Soā¦. While people are asking about other ingredients, have you done bread (or other things) with cottage cheese? Tofu? Parmesan? I donāt like the stinkier Parmesan, but thereās one that comes in small, clear tubs (here, in NS) that smells so much like bread. .

I have a heart defect that doctors said would require a transplant (thatās where this thing usually progresses). My odds of dying increased 6% per year (starting at 53 or so). Amazing how fast those 6%s add up, by 60. I lost count of how many cardiologists I had. I was getting nowhere with weight loss, at the time, until I got into keto.
There are always so many awesome ideas to try, and delicious treats, Iāve felt no need to ever quit. My husband has been loving the āsurgeā of baking, and itās great having him do it with me. Soā¦ after lots of heart medicine and a pacemaker, I was not getting worse, but just ālevel.ā Within a few months of keto and my treadmill, my next appointment at the Transplant Clinic, my heart and fitness were SO improved, I would no longer even need to be a patient of the Heart Transplant Clinic! Lots of happy hugging and tears that day! šš
Weāve been kinda drifting off of it. Heās been lots less strict all along. Iāve been on a ācarb benderā since Christmas. And YOUR recipes, that Iām so excited to try, have already brought me back to the commitment I canāt afford to lose.

Help please! I have been making these protein breads weekly the last 4 weeks (recipe with only arrowroot and egg yolks powder) until this week, the egg white mix doesnt seem to whip up. Twice i had soupy egg whites which i cooked up as crepes instead… may i know what might have caused it? Ingredients were all from the same packets. I really have no clue…. thanks. I use the same kitchen aid machine as always.
Nice inventions but it's getting too complicated for most of us. Getting back to basics with simpler formulations.

Acacia fiber seems to cause me some digestive distress, so unfortunately, this version is a no go for me.
Hi Nili. I made these buns for the second time today. The first time I used fresh egg whites and today used egg protein powder and followed the recipe as written. Neither of the rolls turned out soft and āfluffyā. They were dense and dry. Iām wondering if it has anything to do with the xanthan gum. Not anxious to make again. I did make Wendyās buttermilk bread and buns and did have good luck with them. I know you are dairy free so wonāt be able to have them. Just thought youād appreciate the info. Thanks for all you do. Thank you for this recipe. Is there a difference between the egg white protein powder (Now Sports or Bulk Supplements brands) vs the Judeeās Dried Egg whites? Aside from the carbs, I assume they are the same thing, maybe?
I've been adding 2 Tbsp of oat fiber instead of the arrowroot powder or acacia powder only because I found several bags to use up in my pantry. I really like how the buns turn out with the oat fiber. I also like to add caraway seed and chopped green olives occasionally. Yum! Instead of making a big container of base, I measure out the dry ingredients for several batches in either individual little storage containers or baggies. Then I know each one has the exact premeasured ingredients. Then I only have to measure out the butter powder and egg yolk powder when the time comes. I will have to give the gelatin a try now. Very interesting. Thanks!
This recipe sounds great! I was wondering, have you tried adding the buttermilk powder that Wendy, uses? I bought that and now, Iāll get the acacia powder. Somewhere, in all this kitchen science, we will have bakery quality buns and bread. Also, do you keep your little jar of yeast in the refrigerator? I love how you and Wendy, come up with evolutions of this bread. You girls are the best and talk about the genius of each other. That is so refreshing, in this age of division.
