I really appreciate the discussion at the 14 minute mark and it applies to literally every culture. Gatekeeping is inherently racist and illogical. Human cultures as shared culture and everybody borrows and everybody learns. Race and nationality are never discreet things. They're always changing, always blended. And also the discussion tends to ignore the changes over time even within a particular race or national groups habits and customs. You might be able to say "authentic" as to a particular region at a particular time but people don't use it that way they just say "everything other than fill in the blank is not real" which is absurd.
If somebody in France wants to eat what they think of as an 'American hamburger' and it has 500ml of mayo, I don't think that's really consistent with what an average American eats but there's probably some region or family that tends to eat it that way here.
I respectfully ask how your dads health is and if you found out why he has a sweeping at the neck? All the best from Vienna

If i make kung pao chicken i fry the chicken and fry the veggies and then wok it with the saus and add dry chili and nuts
Yes! Finally the broccoli stems are getting used. Such a shame they always get tossed out; they have such a sweet flavour to them – especially good in hot pot.

I live in an area with a lot of food snobs and they always turn their noses up at "American Chinese food." And to be sure, some is better than others. But I don't think there's another cuisine, other than red sauce Italian (southern Italian) that is more popular nationwide. And of course everyone in the US who is Jewish grew up eating American Chinese food. THAT would be an interesting story for one of your videos!
Every recipe has brought my eating game to the next level. I had a reaction to medication that made it almost impossible to eat a small plate of food and while recovering these techniques for tender meats and dishes made it easier to feel normal again.

What a wonderful episode! And I really liked the ending. It reminded me of all the meals I had at Chinese-Indonesian restaurants in my youth. At first mostly owned by Chinese people who had fled Indonesia, later on Wuhan people came in. It always felt like home, and when I find one of the rare surviving restaurants, it still feels home. When I was a kid, we used to go there every Friday night. Yes, it's different, yes, the tastes are adapted to the local people, and yes, it's still home like no other restaurant is.

I wish I could taste that dish, it looks so good 😍 one thing – I come from a country where a fungal disease is destroying our most beloved native forests, a different imported fungal disease forced me to eradicate my infected beehives, and if one of a few others entered my country, our economy and lives would be in ruins. Biosecurity is no joke and the fact there is "little evidence" is nowhere near enough reason to let imports in when it's not certain! That said, I'm glad we can all eat Sichuan peppercorns in peace now ❤️

I always LOVE watching this channel cuz I always learn something new. Daddy Lau has always been generous to us, he's giving tips and teaching us the right techniques for FREE, and we also get to learn the history behind the delicious dish from Randy!🤩. Kung Pao chicken is one of my favourite Chinese dish, when I first learned and tried this recipe was during covid lockdown, and it was, still, and will always be in my top 3! I always skipped cooking wine due to religious reason (and it's still delicious!!) but I haven't cooked it for a looong time cuz I'm busy learning and trying out new recipes from this channel😅🤣🤣

American Chinese food I believe gets shade and hated on a lot because there are so many places that taste exactly the same and have no style or heart in their dishes. I know someone who is Chinese and his family had their own restaurant and it was great but I do remember him showing me this catalog where everything from the decor to the menu and food being served was pre packaged and set up like you were buying a franchise of some sort.

Thank you for this video. I do agree with your view of what is and what is not Authentic and or Traditional. Here is South Africa we, too, have to make do with what is available and often have to do a lot of research to find what is best to replace an ingredient with. I do have ONE absolute requisite when it comes to Chinese Restaurants, however, and that is please be Chinese. There can be nothing more revolting to me than to eat at a Chinese Restaurant, Chinese Decor, Chinese Food and have Hip Hop clouding my tea or Snoop Dog rapping away….

I have so much respect for the dishes of chinese immigrants in Canada and the USA. It's never been easy for chinese immigrants here in canada, but it was especially bad back in the 19th century, and the early 20th. I resent a sentiment I see that a lot of dishes like this aren't "Real Chinese food".
The food of Chinese immigrants is a combination of Chinese culture, and the steadfast resilience of good, hard working people.
People like Lau are true heroes of North America, adapting to bad circumstances, and culturally enriching both their communities, and the societies they occupy. I really love seeing how wholesome Lau is, and how good a chef he is!
