    I wish I could meal plan more than a few days out. I pulled chicken legs out on Tuesday to cook thurs (meat defrosts so slow for me in the fridge) and I've just heard I'm going to be alone to eat them. It was going to be a new recipe too.

    But this is why a stocked pantry is so good. If more (or less) people are around at meal time you can adapt based on what is needed.

    (I'm still going to make the recipe, just extra leftovers to eat over the weekend and less cooking & dishes to do.)

    Next week I'm thinking stew (free french bread from Albertsons, thanks monopoly!), apricot chicken (use up the rest of a jar of preserves) and maybe fish. But tomorrow's change is something related to next week so we'll see what gets bumped or added.

    I really enjoy eggs and my grocer has them on sale this week, so I have been trying something new to stock up. I am dehydrating them and putting them in jars or bag in my fridge and freezer. They rehydrate quite nicely and they take up a fraction of the space once dehydrated. I don't have oxygen absorbers so I wouldn't trust them on a shelf in the pantry, but I feel good about the fridge/freezer and it is helping ensure we are well stocked with eggs for come what may.

    So after you freeze the eggs in the bags do you put them into the fridge the night before to be able to use them? I would like to do this as well. Can you let me know how it’s done?

    We had to put off our monthly Costco trip for like a week just from seeing the lines outside & people posting all the empty shelves. Finally went yesterday because we were on our last roll of bath tissue lol. Thank goodness most of our list was fresh food & not pantry staples but we couldn’t get any drinks. The only thing we had to go to sprouts for that we usually only buy at Costco was bread.

    Kim it's always good to be prepared!! And think ahead for we never know what could happen! Being on the east coast I'm always prepared for hurricanes and what ever else might happen. As they say plan for the worst and hope for the best!

    So funny, over here in Melbourne Australia Costco, every time l go which was only a few days ago l notice the canned Kirkland chicken and wonder what the heck to do with it. Nobody ever buys it, it’s always going out in clearance. I bought some a while ago and it’s still in my cupboard.

    You can also freeze eggs "raw" crack them, whip them up fork is fine, add bit of salt, freeze in ice cube containers, transfer to zip lock once frozen. To use, defrost "cube" one =one egg.

    Actually the farmed frozen salmon in Costco you showed is from Norway where(unlike most Salmon farming countries) they have good fishing practices, it’s high quality and nutrient dense, now the pink salmon although wild caught is the least healthy salmon out there and has low amounts of Omega 3s, any fisherman would tell you to avoid it and stick to sockeye, king or coho salmon, just a tip for the future, thank you for the video

    Thanks for the tips Kim. I'm not worried so much about getting sick as like you said that the supplies that we need we won't be able to get. So I decided to stop at my Costco this morning even though I hadn't planned on it and stock up on some frozen foods and canned foods and get some toilet paper. I live just north of Atlanta. My Costco looked like someone yelled everything is free in Costco. You could hardly find a place to park or maneuver. Worse than Christmas ever has been! As I entered there was a lady holding a sign saying that they were out of toilet paper and something but I don't remember what it was. I saw people bringing out cases and cases of water. It was a madhouse inside. So thankful I went and I let some of my friends know they best get out and get what they need now! I don't believe in panic but being prepared is always best. I probably wouldn't have stopped today if it hadn't been for you even though my daughter said last Monday she was going out and stock up.

    Just wanted to let you know, nothing is free! When you scan that through their app first you are allowing them to access to all your privacy and personal info beside that you are sharing all your financial information with them and putting yourself out there for a super easy identity and fraud theft. People stay away from doing this type of stupid things for few buck! It is not worth the future complications…
