It's so much fun to watch you, to know the places you mention and to see you and hear you cooking in real time!! You have taught me to make so many dishes and so accurately. I learned bits and pieces from all the Bengali cooks I have known but so many people have no real recipe. They are organic cooks and it all makes sense to them because they grew up with this cuisine. But when you are learning this cooking as you would learn a foreign language, clear parameters help so very much! My luuchis are so good now, my rooti are so good. My subjis are more confident. I have so much more to learn but I have a lot more confidence that I can turn out not just passable but authentic Bengali dishes.

Keep the cream bottle in the fridge undisturbed overnight, next day cut the tetra pack from top and scoop out the thick cream. The water in it will settle down that you can use in other recipes….. exactly hoe you collect coconut cream â¤ī¸â¤ī¸

You need to chill the cream overnight for the whey to separate from the milk solids ,then it"s almost as good as whipping cream
