    Let's make an OIL-FREE VEG PULAO with TVP for added protein content and texture. TVP, soya chunks or textured vegetable protein is an incredible ingredient, which is used in plant-based and regular cooking as a meat extender, and it's so versatile, I can't stop trying out new recipes 😋
    This meat-free vegetable pulao is spicy and full of flavour, we're going to make an oil-free version of veg pulao, pilau or pilaf, inspired by Indian spices.

    ⚙️Equipment: saucepan and / or a pressure cooker, programmable or a stovetop one, blender (or hands) to mix the curd

    ⚙️INGREDIENTS
    BATCH 1️⃣Prep
    🔸1-1 1/2 cup TVP (Soya Chunks, Curls or Strips, but Chunks are preferred for their look)
    🔸1 cup Rice, or up to 2 cups if you prefer
    🔸2 cups Cold Water, to soak rice
    🔸2 cups of Hot Water, to rehydrate soya chunks
    BATCH 2️⃣Marinade
    1 block Silken Tofu
    2 tbsp BBQ Sauce
    1/2 cup Cashews Soaked in Hot Water (or Blanched Almonds)
    A pinch of Salt to Taste
    1 tsp Chilli Powder
    1/4 tsp Turmeric
    BATCH 3️⃣
    Whole spices (fennel seeds, cumin seeds, black pepper, bay leaf), crush them with pestle and mortar if you have them.
    BATCH 4️⃣
    4 small or 2 big Purple Onions
    BATCH 5️⃣
    3 Thai Green Chillies, chopped
    1-inch piece Fresh Ginger, diced
    BATCH 6️⃣
    1 Carrot, diced
    BATCH 7️⃣
    4-5 Cloves Garlic
    1/2 cup Strained Tomatoes, Veg Broth to deglaze
    BATCH 8️⃣
    Ground spices (Ginger, Mustard Powder, Cumin Powder 1/4 tsp each, Curry Powder 1 tsp, Cinnamon 1/8 tsp)
    1 cup of Water for rice
    🌱GARNISHING
    Parsley

    ⚙️METHOD
    From 1️⃣, soak rice and TVP for 20-30 min. 🕑
    Once done, discard rice water, wash the rice. 💧
    Squeeze TVP.
    Blend 2️⃣ to prepare the marinade.
    Marinade soya chinks for 20 min. 🕑
    Heat up the pan or an instant pot in a saute mode.
    Add 3️⃣and toast for 2 min. You should smell the aroma, but spices shouldn't burn.
    Add 4️⃣, allow to brown. Once onions start sticking to the pan / instant pot – throw in 5️⃣
    Keep saute-ing.
    In 1 min, add 6️⃣Saute for 1 min further, deglaze with strained tomatoes or liquid of choice.

    Keep watching your instant pot, so there's no burn.
    Add soya chunks with the marinade.
    You may add a touch of water of 1/2 cup of strained tomatoes for moisture.
    Add soaked, washed rice.

    Finish up with 8️⃣!
    Close the lid on an instant pot. Allow to pressure cook for 10 -11minutes or 2 whistles.
    Slow release.
    Definitely try parsley for serving, it' adds a lot of freshness.
