Scotcharoos are my FAVOURITE bar for around Christmas time! My grandma always made the recipe with rice krispies and butter in the base bar instead of relying on cooking the sugar and corn syrup to the perfect temperature (I think she was scared of learning candy making like the rest of us, LOL) and they were always so ooey gooey chewy and delicious! Her frosting for them was always a bag of milk chocolate chips and 3-4 tablespoons of peanut butter to let it set up but still be creamy. All of my siblings and I grew up hating butterscotch chips so when I come across a recipe that uses them for the frosting I'm always like 🤢🤢🤣
My favourite trick to making Rice Krispie Treats is doing it in the microwave in a large mixing bowl! Melt the marshmallows with the butter until they puff, stir until the texture of marshmallow fluff, and then you can pour in the rice krispies. Less chance of burning yourself on a hot pan and I think bowls are somehow easier to wash up than dutch oven sized pots.
My husband laughs when I do massive research before buying an appliance. I chose that instant one (an older version) I love the screen on the front telling where your pot is in the cooking process.
