Yukgaejang Ingredients
For the Beef Stock
1 lb. beef brisket
5×5 (about your palm size) Kelp, Dasima/Kombu http://amzn.to/1TsJ8zj
3 green onions
5 to 7 whole garlic cloves
1 Tbs. black pepper corns
15 cups cold water
For the Chili Oil
10 garlic cloves, chopped (approximately 1/4 cup)
2 to 4 green onions, chopped (approximately 1/3 cup)

5 Tbs. toasted sesame oil
1 tsp. salt
1/2 tsp. black pepper
3 anchovies
3 Tbs. soy sauce
For the Vegetables
2 oz. gosari (dried fernbrake), optional http://amzn.to/1TsJohJ
2 oz. gobi (royal fern fougere), optional
2 oz. torandae (dried taro stems), optional
4 cups green onion (if you are not using any of 3 vegetables above, increase it to 6 cups)
1/2 lb. bean sprouts
To Serve (for 2)

Or just add a tablespoon of fish sauce and cancel the anchovies, which by the way, doesn’t even look like a Korean brand cause Korean anchovies are dried. 🤦🏻♀️
Those large green onions seem a lot like leeks 😁 I might use leeks. I love the flavor.

I remember watching a Jackie Chan interview and he said that yukgaejang is his favorite food and always seeks it out when he's in Korea.

Seonkyoung, I first ate Yukgaejang in Chuncheon in 1985 while stationed at Camp Page in the U.S. Army. I will never forget how instantly comforting it was on a very cold winter's night. Thank you for sharing this.

Thank you so much. I followed the recipe and it was really really good. My wife said that it tastes just like the restaurant 3 times while we were eating it. I ended up adding little more salt and red pepper flakes to my liking. I looked for the bottle of anchovies at Lotte and H-mart but couldn't find it. However, found it next to cans of sardines at Safeway. Also, I was worried that the glass noodles wouldn't get cooked but it was perfect. I always visit Aiiiiiisiaaaann Ut Hummmmmm whenever I feel like cooking Korean dishes : )
