    Great idea … I think I might use 2 different kinds of white beans to add more texture. I’m also thinking, since I have a plethora of them, that I will blanch some green beans and add them to this salad too. Would it be “over the top” to consider adding some olives too? Hmmm…I’ve got some gorgeous red peppers too…yep, they’re going right in with the other ingredients. (I might need to double the dressing mixture.) I think serving this on top of some escarole or endive, with some crusty bread and slices of manchego cheese along with a crisp white wine will make this salad a complete meal. Thank you for kick starting MY creative cooking response.

    I’ve never used dried parsley…I thought that was for people who don’t have access to or understand how much better fresh parsley is. Can you tell me why you use it? Love your recipes!🤍
