Looking forward to the episode on making pasta. Learned how from my mom many years ago. Started doing it all by hand, graduated to a handcrank machine almost 40 years ago (still have and use that machine). Also have a roller for my KA and within the last 2 years have started to use an extruder.

our kitchen is being renovated so I’m “cooking” in a temporary space in the laundry room for several months. I’m using a single burner induction that Wed bought for our camper, electric kettle, microwave, toaster and, after actively shunning the trend, bought an air fryer. Gotta say it’s terrific!!

About halfway in and I have two comments. Everything you say about the gimmick tools such as InstaPot and the rest is spot on, but I as much as I resisted the air fryer, for two retired folks its been great….ultra-rare burgers in 2 1/2 minutes, chicken thighs in a half hour, etc. My other comment is that whoever did your podcast studio never bothered to level the light switch to the left of Jim's head; that keeps bugging me every time I watch. Other than that, I'm definitely excited by this episode, keep 'em coming.

Great topic! I would have loved two episodes on this🙂I love my air fryer (I have a Cosori basket style). since the heat is concentrated in a much smaller space it browns the food a lot better and faster than my large convection oven which happens to be an induction stove and I love it. I also have a Vitamix, Kitchenaid stand mixer and a Cuisinart food processor and I love them all for different reasons. I have had an electric pressure cooker for years but never Instant Pot brand. I use it mainly for dry beans and homemade chicken stock. I don't think some people realize it's just an electric pressure cooker which have been around for a while. I can't see myself ever owning a deep fryer since I hate the idea of cleaning it and I can just use one of my dutch ovens.

Team Tara! For example, the FDA recommends washing the outside of avocados because of salmonella and listeria risks. It can transfer from your knife to the fruit as you slice into it.

Our kitchen is 600 sqft and there's not enough storage space. Even with a 5×7 pantry. No overhead cabinets – it's all windows. If I had it to do over, I might rethink it.

All clad, twice a year has a factory defect sale which is super cheap, I can't seem to find the defects but they claim they are factory seconds. Also Staub has a sale twice a year which is great, just wait and buy the nice stuff then.

I agree 100% for me though 8" chef knife, cast iron camp style dutch (open fire cooking addict) , and yes tongs deep well tongs because they can spoon as well. Honestly it's all I use anyway day to day outside of a larger knife for breaking down whole animals but I can do it with less if needed. Gimme a 30-06 bolt action and those tools and I'll be the first Michelin star hut in the apocalypse.
