When I received an 8qt Mealthy pot as a gift, I did not think I would use it, way too big. I use it all the time. 8 qt gives us some leftovers to enjoy the rest of the week. It is not an instant pot, but I have not been disappointed. And I may want to eventually get a smaller instant pot for those times I need an extra pressure cooker. Anyway, thank you Kathy for the tips and tricks in whole food plant based cooking!
