You always do such a nice job and I am so proud of you! I know there is a lot on you being a mama of three and a military spouse. You are amazing! You might find that if you used a wok or a bigger pan, your rice would sort of dry out more, so to speak? I tend to crowd my pan as well, but that's just what I have, so I more than understand. Take care of yourself and know that you are loved.
Pancit Bihon is pronounced pan-zit bee-hawn (like dawn with an H). I still haven't perfected the rice vermicelli though. Keep trying eventually you will perfect what ever it is you are doing.

I'm a home cook as well. Been cooking since I was 9 yo, I'm 57 now. The best way to cook your rice is with a really simple rice cooker. I got one at Wal mart and you add up tp 3 cups of rice add water to the line in the cooker and press a button and it shuts off when done. You can add your spices and flavorings as the same time as rice. I no longer have mushy rice because I don't over cook it, lol.
Everything looks delicious! I think with the rice, you can cook it a little longer so the moisture will cook off. Perhaps take the egg out so it doesn't get too hard. That avocado salsa is genius 😋! I love pandit too, yeah like I said, everything looks delicious!!
