It is so smart to make one or two yummy meals for at least 4 days. Time saver and definetly cost effective. If you make two meals you can even switch and match. It's just the way to go
In ceviche the shrimp isn't necessarily raw it is cooked in lime juice but I always parboil the shrimp.

Yum! I’m going to have to make the buffalo stuffed sweet potatoes. I’ve made them before, but it’s been a while.
We tried the zucchini fries right after Jen shared them, and have made them several times since. I think I used more zucchini, so our ratio of “batter” to zucchini would have been different. I think the bigger pieces like you mentioned would work also. If not, add more zucchini and see if that is better. We also made them with yellow squash and like it better than the zucchini. I add oregano to the mix. So good!
I’m also a big fan of making a Boston butt. It makes for an easy week of dinners. We like to use it for BBQ nachos and stuffed potatoes.

I grew up eating the "chicken stretcher" recipe we just always called it chicken casserole. My mother's side of the family makes it and it is dish I make when I miss home. I am a military spouse and we just moved across the country and before we did I went to visit my grandmother in NC and she made me one! You are right it just feels like childhood! Love your videos!
