If I don’t have whipped creme or ice cream I find vanilla yogurt or even flavoured yogurt is a good substitute with many kinds of pies , cobblers or crisps. Even plain yogurt or sour creme with some of your own additional flavourings would work.
Mandy those ready to use pie shells can be rolled out even thinner using a bit of flour with a rolling pin. It’s possible you could only needed one pie shell for your chicken pot pie ( yes the crust would be a bit thinner ) and used the other one for another recipe at a later date.
