Hi Kathy. I got my box yesterday. I was hoping for minestrone makings and I wasn’t disappointed. Today I used the Kale, yellow squash, tri colored carrots, lovely purple and red potatoes from last box, red onion, celery and green beans (yes!)! Perfect minestrone. Then I used the poblanos (roasted) in an impromptu dish with more green beans from the store, collards, onion, green cabbage, vegan meat balls and canned tomatoes and marjoram for a sort of deconstructed cabbage roll soup. I’ll see how that tastes tomorrow (slow cooker overnight). Have a wonderful week.
