    Oh Jill. I have a story about this recipe for you. My husband and I made this recipe 3 months, or so, back. We grow Scotch Bonnet peppers in the greenhouse, as being in Texas, we love, love, love heat. Well, he wanted to put one in the stew. I said we shouldn’t do it. He insisted. We did. I couldn’t eat the stew. I had two bites of it and died. So, yesterday we made the stew again. (What took so long? I don’t know…..life!). Anyway, he was NOT allowed to add anything in this stew. I added 1/2 teaspoon of cayenne pepper and it was great. Not too hot or too mild. We used the chopper slammer on the large dice (1/2”) for all the veggies and used a sweet potato in the mix too. I then timed it 1 minute on high and 15 minutes of keep warm, then a quick release. The next day the potatoes were just perfectly done. Here is the key: I always add a tablespoon of cilantro chopped to the top of the stew in the bowl, and also add 1 tablespoon of Maple Syrup to the soup bowl as well. OMGee as you say! That was heaven in a bowl. Thank you so much for the recipe. Here is another little trick, if you like cilantro, to add to the stew. You know those perfectly good stems below the leaves of cilantro? I take a bunch of them, cut off the bad ends at the bottom, and the leaves at the top, and finely chop just the stems, to add to the stew. They work very well. Just a little trick. After pressure cooking you don’t even know they are there, but the taste. I bought the stems as well as the leaves, so why not just use them??? Thanks again my friend. 😘
