Awesome! 1st time viewer and it felt like sitting in the kitchen with my Uncle Ambrose or Aunt Jewel <3 (bro and sis). They've both been gone nearly 15 yrs now, but they live on in every new jar I put in the pantry. One thing we'd do different was letting it set overnight, letting a layer of ice melt over it. Being in their late 80's, they'd say they were to tired after all that chopping, lol! I'm the only one of my generation that does full-blown canning. A few cuzzins do awesome jams and jellies, but that's it. THANK YOU SO MUCH FOR STIRRING UP THOSE PRECIOUS MEMORIES! Hugs and Blessings!

My Mom made chow chow but she also made what is called "Piccalily." It was similar but had a different brine mixture that included cloves and allspice. Sounds weird but was so delicious! It had green tomatoes, peppers and onions that I recall and may have included other veggies, not sure. Did you know that Ball now recommends not boiling your lids and rings but to just wash them. Not sure why but that's what they recommend with the newer lids. They also recommend just tightening the lids "finger tip" tight and to always debubble (poke around the edges with a chopstick or a debubbling tool) and wiping the rims with white vinegar before sealing and to make sure your water bath water is at least an inch over the top of the cans.. Things sure have changed from the good ol' days! Like you said, we're still alive after eating our Mom's canned foods! lol

Especially since Walmart has canning jars on clearance now. 😊👍

Good Afternoon, your video for chow chow popped up on my suggestions and I have been thinking about making some chow chow myself and after watching I will be making some this week. Wanted to know if you know how to make some old school fried corn. I had some when I was a child and have been wanting to learn how to make it for myself. Thank you so much if you are able to make a video to share. Im going to bringe watch some of your videos as I just subscribed to your channel as I was watching your chow chow one.

Yes-sir…I KNOW all about Chow Chow…my grandmother did not set the dinner table (or supper table, and come think of it, probably breakfast too!!) Papa had to have that Chow Chow and homemade hot pepper sauce on nearly everything he ate !!! Oh yeah, and it was GOOD, too. Sure miss those days…but being a farmer was hard work all day every day for EVERYONE in the family, including children…I'm so thankful I grew up knowing how to follow through on chores to the best of my ability, from an early age (how to pick and shell peas and beans, for one !!! Nearly everyone hated shelling butter beans, but I loved butter beans and my little hands worked as hard as they could to get those shelled !!).
Thanks for the memories and this great recipe !!! I look forward all your canning recipes coming up next…
