    I’m so totally down with the vegan egg salad on squishy white bread! I’ve been using the Viet Vegans recipe however I’m so going to add the nutritional yeast the next time I make it

    oo have you tried chocolate mousse that's literally just melted chocolate, silken tofu, and a sweetener (optional)? it's not airy but it's insaaanely good, and i'm an omnivore who hates tofu lol

    I have a few tips for the mousse. Usually you warm up the egg whites & sugar over a double boiler just until the sugar dissolves. Then you whip it. So maybe warm up the aquafaba the same way. Also the chocolate you use is key as well. You used “bakers” chocolate. That one in particular still has additives that help it set (almost like a chocolate chip) Trader joes sells a big bar of chocolate that I would say is better. Try going for a 55% or higher cacao. And do fold in a little chocolate to the aquafaba before you add all of the chocolate. Just to help with the mixing and so its not too dense. I hope this helps 🙂

    Whenever you're adding melted chocolate to something whipped, it's best to add some of the whipped stuff to the chocolate to lighten it first. That makes the chocolate mix in easier. I don't know if it will prevent the mousse from being grainy. I've never tried to make it myself.
