    Your day of eating looks delicious. I have a couple of griddles in my shopping cart online but haven't yet committed to the purchase. I did buy a Breville sous chef peel and dice that should arrive tomorrow and my first use of it will included shredded carrots, cabbage, cauliflower, chopped onions and diced potatoes. I'll saute the nonstarchy veggies, then add in garlic, potatoes and other goodies, cook,, and then blend 60 percent of the soup to make it creamy potato veggie soup. It's tasty and no one knows just how many veggies are in it! That food processor is my saving grace to keep going on a WFPB way of life, for the rest of my life. I hate to chop and dice and cut. I use scissors on my green mix too. But I might try to pulse small batches in my new food processor and see how that works. Has anyone tried that method?

    Ha, I thought I was the only one who chopped salads with scissors! I don't have a nice salad bowl like yours, just a tall dollar store storage container, but the scissors work perfectly with it. I just keep cutting the greens up which adds more space for more goodies!

    👌Everything looks yummy. I need to get a big 🥗wooden salad bowl like that. I made a big veggie lentil soup yesterday in my instant pot. Soup is my comfort food. So filling & easy. 😀
