    I've lived alone for a few years now, and while I enjoyed cooking when my daughter was still home, I find I hate cooking for just me. If I don't prepare some things in advance, I'll just eat whatever I can grab or zap quickly, so a lot of frozen veg burgers and such, which are vegan but really not healthy when I have so much weight still to lose. I've been very bad about it for the last couple of years, in particular, but I've promised myself that when I have time on Tuesday, I'm committed to making some food for the next few days, and for the freezer, and getting back on track. I'm going to make double and triple batches of some of my favorite dishes to have plenty in the freezer for those days when I don't have anything ready and am too lazy to do more than reheat.

    😴 Yeah. I've been cooking for over 60 years. Sometimes I burn out. But since the hurricane, we lost everything in our refrigerator and freezer, including the refrigerator. So now, with a new appliance, I'm enjoying having prepped food that isn't going bad! Today I made refrigerator pickles, pickled onions and cooked apples after a day of grocery shopping. I'm taking tomorrow off (we have leftovers to finish uo) and I'm beginning with prepping components on Monday. It's gonna be a good week! Thanks for your inspiration!
