    The best coating for fried chicken is called Oven Fry, but you don't have it. Take my word for it, it is absolutely the best coating for chicken and pork chops.

    Buttermilk is not a brine. Brining would add “juice” to the meat through osmosis. Soaking in buttermilk is a form of cooking due to the acidic pH, similar to how ceviche is made. This means that if you leave the chicken in the acid for too long, you risk overcooking it. That is unlikely to matter for standard CAFO chicken that lives in a cage breathing aerosolized chicken manure, but if you buy real chicken that has actual flavor then soaking in buttermilk for more than a few hours is a mistake.

    In coastal New England Ritz crackers are often used for baked seafood such as cod, haddock, and lobster. Used as a coating and for a casserole style. Buttery cracker with a little lemon works great.

    One of my favorite things is the kid was pork chops coated with shake and bake. I still make it occasionally for my kids. They definitely enjoy it.

    I’m gonna have to pick up a couple boxes of the chicken flavor.

    Thanks for the video! I'm running into issues with the breading not sticking to the chicken when being cooked in the air fryer. Then when it's done the chicken releases its juices and making the breading soggy. Any tips or advice? Thanks in advance!
