Secondly, this turned out AMAZING, so congratulations. Third, we can't really take much credit for the beef tallow… our friends at the Galley of the Sun have had us obsessed with the idea ever since we saw them using it. Honestly, I believe that this is one of the best tasting corned beefs you've ever had. It looks fantastic Chris. Beautifully done my friend!

    Beef tallow is amazing when used correctly. It's still pretty great when used incorrectly too! 🤣

    Regarding beef cuts, beef is a global commodity. The beef we get here might be from the US, and it might not be. Down here in Central Texas we go through prime and wagyu brisket like crazy, nobody else does so guess where it ends up? Here, obviously. Look at other cuts, tri-tip for example. You might have a nice selection of that, we can't hardly find any.

    You might want to talk to your butcher and see what they can get. They would love to hear from you and it's not a difficult conversation to have at all. Also you may have cattle processors in your area. Call around, you might be surprised what you can source locally. 😎

    I've been using local ranches lately. It's not any less expensive, sometimes quite the opposite, but it sure makes me feel good about eating food that was raised near my home.

    I haven't been able to find those corned beef cows yet though. 😂😂😂

    Hey Chris! I like You and your channel so I'm only trying to be helpful here.
    Injecting this Tallow is a waste of time and money. As soon as the meat fibers start heating up they will squeeze out all of the tallow.
    Not just tallow but anything that you may inject. It may impart and leave a little flavor inside the meat, but as for trying to take a lesser
    grade of meat and try to make it more tender and juicy like a higher grade is fooling yourself.
    Nothing can replace having a top grade and high quality piece of meat. It all starts and ends with the animal…..period.
    Now after You smoke this corned beef or a brisket you can brush on some heated Tallow to the slices to add that flavor……but besides that,
    the injected tallow is in the bottom of your pit or in that paper wrapping. Sure I know some may say it was tender…….but it wasn't 
    because of the injection. Just looking out! Metal On! 🔥/

    That looks really good. I've never made corned beef before. I like it, but Jessie doesn't. So I'll probably never make it. That's a bummer. The irish part of me would love to have some homemade corned beef hash mmmmm.
