    HEADS UP: I get a little choked up at the end of this video. I'm not trying to be a "drama queen", but I am a big softy and I wear my heart on my sleeve.

    There were a handful of truly awful and hateful comments made to me last week (the worst since I started this channel), including some pretty vile and insulting stuff about my wife and children. So when I read all of the wonderful and touching comments on my Pantry Giveaway video, it couldn't have come at a better time for me. I truly appreciate you, my viewers.

    Awww, you are so sweet Steve! I’ve been following you for several years, I think. Always enjoy the podcasts. I’ve missed some lately, but catching up on some now. Try not to listen to those writing bad comments, it’s not you, they do that to anyone with a channel, jealous maybe? I hope you do the sweetener video soon. I’d love to learn if one type is better for certain types of baking. I’ve made meringue cookie that turned into marshmallows! Go Pack! But what will we do without Aaron on Sunday? ❤️😊

    Steve, I have been watching your channel for just about two years now. I made the decision to get healthy two years ago this month. After looking at various ways of eating and having had success with Atkins in the early 2000's, I began reading up in earnest on the Ketogenic way of eating. With your channel and others (and many books) I have lost 170 pounds since January 2020 when I dove head in. If it wasn't for your channel I don't know if I would have had the success. I have made many of your recipes, you turned me on to chaffles and I love your video on sodium citrate. It's a game changer for sure. Many wishes for your continued success here. <3 from Texas.

    Hey Steve – don't ignore the high carb negatives, just by-pass 'em. You Sir and the Serious Keto channel are as good as a pinch of salt during a 72 hr water-fast and your content is as satiating as bacon in hr 17 of 16/8 IF. Keep up the great work and may all your ketones be endogenous!!

    I watch your channel often but usually don't comment, but had to do so today after watching you. I am so sorry that mean, hateful people made you feel bad. You are right when you say that they just want to make other people feel miserable because THEY are miserable. Try to ignore them. I feel your channel is unique in the keto world, and has helped me so much in my journey. Also, if you can develop a recipe for keto jelly, it will blow my mind! I have been missing jelly so so much.

    Steve, it sends every YouTuber faces the negative commenter issue. There are just some really sour people in the world and the internet is a wonderful place for them to express their displeasure without consequences. As long as they remain a small percentage you'll eventually grow a thick skin to them. It didn't make their comments less rude. But, hopefully, you'll grow to ignore them. Your videos are great.

    Awww, we love you too Steve! I love how brutally honest you are! You would have to be incredibly strong and stable to be able to tough it out on Social Media. So many people use this platform to release their negative emotions because they can simply get away with it. There is no way they would say those nasty comments to your face. That is how cowardly they are. You are so much better than that in so many ways. People with their own issues are jealous of you. Take it as a compliment. They are jealous because your channel is that good! It takes all types and you get them all on Social Media. This is all worth it. We enjoy your channel just as much as you do. Those internet Trolls no nothing about you or your channel. Sounds like they are just doing what they do, just scrolling around leaving nasty comments on people's channels to get attention. You have to really think bad of yourself when you on purpose try to hurt someone else. Those type of people are really unhappy(I know you know this!). Keep doing what you do Steve. You have our support. I love your family and how they support your channel and so does everyone else(that matters).

I love that you try new products and give your very candid opinions with family in tow. I have used so many of your recipes and you have helped me so much conquer my cravings with your substitutions you have no idea. Carry on my friend and don't listen to those 💩heads.     I was a chemist who developed products and processes, always having to think outside the box to solve issues with product development, analytical method development and manufacturing processes (in multiple industries including pharmaceuticals). I also had been a field service engineer for analytical equipment in my earlier career. So I totally understand. As for thickeners, ones I have used are things like alginates (although some people have allergic reactions to them), most of the others I have used were synthetic and thus not meant for food, although some ARE used for this purpose. Essentially there are three types of thickeners. Starch/sachharides based which include most gums, starches and alginates. Some are only digested by the microbiota in your gut, and produce some gas. Protein based such as gelatin, milk, egg yolks and a few others. These generally need heat to work well. Finally there is whole food type thickeners like tomatoes, which again need heat. I assume you do not want to use such as polysorbates, Polyethylene glycols (PEGs) and the one I worked on Carbopols (they are what make a lot of shampoos like Prell thick and are deactivated by adding salt, turn prell to a runny liquid by adding salt to it).

    We do love you! But about that bread. 27 grams of fiber would stop me up for a month. I drink min. 8 cups of h2o dly. If I ate that I would have to drink min of a gallon plus. I know people will say I need a gallon a day any way, but I will continue to do me. You do you

    Lol. I was thinking of mail order meals. Our stores are limited on meats. Would you be able to do a segment on that due to trying to stay on keto as best as possible? Love the mug and shirt. Very funny.
    It’s hard being the only family member being on keto. Mean people just suck. Don’t mess with the Keto family. We are healthier and stronger and will out live ya. 😁

    Hi Steve just wanted to say you were one of the first channels that I subscribed to when I first started my Keto journey.
    That was 5 months ago. You taught me how to make chaffles, , dressings, coleslaw and many more keto friendly meals and delicious dessert.
    Thank you for all you do for the keto community. Love your channel and you family. You guys are all so down to earth love your humor and enjoy your interaction with your wife, kids and grandson.
    I guess those haters never listen to their moms when they were told “ if you can’t say anything nice don’t say anything at all”

    Steve I missed any of these nasty negative comments but… First of all shame on them how immature. Two if I had seen these I would’ve given them a piece of my mind. Just ignore that you’re right it’s not your problem that people wanna make a fool of themselves. You and your channel are loved and you should focus on that!

    Well Steve. I lost my mind and became an executive chef. Lol. I did so for several reasons. Not least of which is you channel is useful. And you never take undue credit. If it's your recipe then by all means take credit. But when you know your standing on someone's shoulders you give credit where it is so. Well done.
