My Mom used to make the best Venison Roast. Couldn't really tell it wasn't beef. A neighbor said she would never eat Deer meat but came over for dinner one time Momma invited her and Momma made Venison roast and the lady couldn't tell it wasn't beef. Momma told her after dinner was over and she was surprised at how good it is. My brother hunts and would bring it home already cut up. Momma cut it up in chunks too for stews. Looks good.
Stew meat is awesome for chili, and hey you got beans too! It does look nice and thick, a whole ton of flavor and gotta be spicy! As someone else mentioned, there are a ton of variations on chili, one wonders what defines chili? If I have a beef stew and I add chili powder to it, does that mean it’s chili? Don’t even get me started on white chili (which I love too). 😂 Awesome job Mike!

Stew Meat Chilli is next level Chilli for sure. There's Elk running around almost everywhere here in Colorado, but I don't hunt, can't afford to buy it, but I'm pretty ok with beef stew meat. Stew meat. No beans. No tomatoes. Only way to make it better is to find some road-kill that is not too old. I wonder how many worlds best chili recipes there are out there..
