    Mmm I grew up loving ramen…who else would lick the inside of the seasoning packet after dumping it in?!🫣 guilty!

    This version is extra fresh, gluten-free, and loaded with protein and fiber! Enjoy!!

    Vegetable Ramen w/ Tofu!

    🍜 2 bricks brown rice ramen
    🍜 1 block extra firm tofu
    🍜 1/2 yellow onion
    🍜 3 cloves garlic
    🍜 1/2 red bell pepper
    🍜 1/2 cup mushrooms
    🍜 1 cup chopped bok Choi
    🍜 2 tbsp coconut aminos
    🍜 2 tbsp nutritional yeast
    🍜 1/2 tsp curry powder
    🍜 salt + pepper to taste

    1️⃣ Preheat oven to 350F. Slice block of extra firm tofu into cubes and place in a large mixing bowl and drizzle with coconut aminos. Toss to evenly coat and allow to marinate.

    2️⃣ Sauté onion, garlic, bell pepper and mushrooms with salt + pepper in a pan with a splash of water on medium heat. Turn off heat and add chopped Bok choi and stir until just barely wilted.

    3️⃣ Add tofu cubes to baking sheet lined with parchment and bake for 20 minutes, tossing half way through.

    4️⃣ Meanwhile, bring a pot of water to a boil, reduce to medium, and add two bricks of ramen. Boil for about 3-4 min or until tender. Drain water to your liking and return to stovetop.

    5️⃣ Add salt, pepper, curry powder and nutritional yeast to noodles and mix well. Add sautéed veggies and tofu, serve up and enjoy!
