I made this but I used a twice baked sweet potato and I used Better than Bouillon in my roux and rice… instead of broth delicious

Looks good, but too much oil. Oil in the rice, potato and the veggie.
cant go wrong with coconut milk, not sure if its due to how you got it, whether fresh, canned or powder it has a potential to curdle up but it does not ruin the flavor. Just lower the temperature and keep on stirring it to minimize the possible curdling.
I would add a little spinach or greens.
Tastes best with Jamaican Curry powder

The recipe was very good but you are using too much oil. You could sautés all veggies with water and still get the same taste.

My brother hates vegan food, no matter how good it tastes. I'm not vegan but I do occasionally like making vegan recipes, such as coconut lentil curry.
The sauce is so much thicker & tastes meatier if you cook the sweet potatoes in the curry
