    Ingredients 🧘‍♂️🫶🌱🙏

    1 cup red lentil (185g)
    1/2 cup Quinoa (95g)
    Wash and soak 30 minutes

    2 to 3 tbsp olive 🫒 oil
    1 1/2 cup onion 🧅 (200g)
    1/4 tsp salt 🧂
    Fry on medium to high heat until the onions start to caramelise, while stirring frequently.

    1 tbsp ginger
    1 tbsp garlic 🧄
    Fry on medium heat for about 1 minutes, while stirring frequently.

    2 tbsp Tomato 🍅 paste
    1 tsp Turmeric
    1 tsp Ground Cumin
    2 tsp Ground Coriander 🌿
    1/4 tsp Ground Cayenne Pepper 🫑 (optional)
    Mix
    Tomatoes 🍅 2 cups (300g)
    Mix
    Soaked Red Lentil
    Salt to taste
    Water 5 and 1/2 (cups 1300 ml)

    Stir cover bring to boil

    Reduce heat to medium to low

    cook on medium to low heat about 25 minutes

    Mash the lentils with a potato masher

    Quinoa
    Sweet Potato 🍠 3 cups (400g)
    Green beans 1 cup (100g)

    Increase heat to medium stir cover and cook for about 7 minutes

    Increase heat medium to high

    Broccoli 🥦 1 and 1/2 cup (120g)
    Whisk with spatula to make creamy
    Turn off

    1/2 cup (26g) coriander 🌿
    1/2 lemon 🍋

    I want to start eating less meat so I was looking for A meatless recipe to try. I was hoping for something with less steps in it but this looks very good I might try to make.I only have the onion garlic and pink Himalayan salt.need to go shopping…Hope I can pull it off.🤞

    I'm pre-diabetic, so trying to cut back on carbs & sugar. Quinoa is a good choice for that, so looking forward to trying. Not fond of sweet potatoes, tho. Substitute carrots? Maybe add with lentils so they cook enough? Thx for posting AND ESPECIALLY for keeping the video SO simple & easy to watch, not a lot of extraneous chatter and music that's easy on the ears. Great job!

    I LOVE LOVE LOVE this recipe! Gonna have to try it, but my daughters don’t eat green beans (French beans). May have to “exchange” those for edamame beans instead.

    PS I would love to know how to pronounce "Khichdi", though! And may I ask, what would you recommend serving this with, if anything? It already has sweet potato and quinoa in it, so there are carbs in the dish and I guess it is a one-pot dish that maybe needs no accompaniment? Please say! Thank you.
