    I tried the chickpea sandwich you made in last week’s video and LOVED it! I look forward to trying some of these too. My favorite dish is Cowboy Caviar. I eat it as a dip, as a salad, or as a topping to quinoa or rice. Here is the link to the recipe I use.     We do plant based often, my hubby goes vegan off and on. One of my fav recipes are these egg rolls we make – https://youtu.be/gzgMxjjPfnc – the version I made here was vegetarian but you just take out the cheese to make them vegan! So GOOD! We also love vegan chili with sweet potatoes, beans and quinoa.
