Made this myself today. Simmered my broth for 8 hours. Added a thumb-sized nugget of yellow rock sugar. Pretty disappointed. Broth ended up tasting like mushroom water. Hard to believe that something so fragrant could end up tasting so bland. 3/10 Would not recommend. Don't know how vegan restaurants make their pho taste so good, but this recipe is a whole lot of work for a majorly disappointing broth.
I made this pho because I love mushorooms and nothing against vegans, but I can't really get into vegan pho. But pescetarian pho is fine; IT NEEDS FISH SAUCE.

I feel like recently a lot of the commenters who watch vegan tasty videos expect to only come across vegan haters (I know there there are a lot of them but hear me out) to the point that they’ll comment negatively for people to stop hating even when there aren’t any haters to begin with. I understand why people feel the need to say it (I think it should stop too) but it makes me kind of sad that it’s come to a point where you really only can expect negative or angry comments when watching a vegan or vegetarian video.
Made this tonight for a vegan friend. I cook asian food quite often and i followed the recipe exactly, but after 8 hours i was left with a slightly mushroom/aromatic flavoured water which was SO bland, even after seasoning and adding the fresh ingredients on top. We only managed a few mouthfulls each but ended up chucking it and having beans on toast instead 👍
