I love sausage gravy over fried potatoes or biscuits. Reminds me of my mom, she made gravy alot. I was glad to learn that gravy can be frozen.

Looks delicious. I was thinking when you had the sausage, chopped peppers & onions and potatoes all heat through, add a few beaten eggs with a bit of milk, pour over the ingredients in the skillet and bake in oven until eggs are set….Yum. BTW Prepper pot pouri has a collab going for air fryers. Everyday during Feb. there will be a recipe from one of 5 or 6 people using their air fryer. At the end of the month there will be a give away (based on comments for the shows) and picked at random by the computer. It is a lovely big air fryer well worth watching the videos and commenting and probably find new recipes to add to your stash. Have a Blessed day.
