I love your low budget meals Maria! I'm new to your channel but I'm loving all your meal ideas. I'm on a fixed income & I'm a bit older (late 40:s) & disabled due to health issues. My older two kids (I have 3 all adults now) help me out & do most of the cooking so I try to get meals into the monthly meal plan that will be easy for them to make but yet very delicious & filling. I turned to YouTube for ideas & found your channel. I'm loving everything!! My husband (my kids father) passed away from cancer 4 yrs ago so YouTube has become our best friend in learning a lot of different things especially things my darling husband use to do for our family. Our budget has been super tight and I love how your meals have fit right into that budget! Thank you so much Maria! So happy I found you! Your babies are absolutely adorable! Next time you make them, try this…
Use chicken broth instead of water.
Season with old bay seasoning, Cajun seasoning, chili powder to taste and add a pinch of gumbo file( fee-lay). This will make the “gravy” thicker.

The FDA has this on their website about using dry beans. "Beans (Phytohaemagglutinin): Phytohaemagglutinin (PHA) is a lectin found in raw or undercooked beans. Lectins are proteins that bind to carbohydrates and some plants produce them as a natural defense mechanism. In canned and properly cooked kidney beans, the low levels of PHA won’t affect you. But at high levels in raw beans, PHA can lead to nausea, severe vomiting, and diarrhea. Soaking the beans for a minimum of 5 hours and then boiling them in fresh water for at least 30 minutes will remove and destroy this toxin." The slow cooker alone apparently doesn't get to a high enough temperature to destroy the toxins. Just thought you might like to know this.

As someone from Louisiana, I can say your red beans and rice look delicious!! You don’t need the andouille sausage and the Kielbasa was a perfect sub. Cool Louisiana fact…red beans and rice are often served on Mondays to this day. It was historically “wash day” for most households and gave wives time to cook a low and slow meal while tending to the laundry. 💗💗
