    Just made this with a twist…once I shredded the chicken, I put it back in my Instant pot with four diced small zucchini, and put it back under pressure for 6 min…all the wonderful salsa flavor really settled into the chicken and squash and it tasted amazing! Also, I didn’t have breasts, so I started with frozen chicken thighs, bone in. The first pressure cook I did on high for 27 min. It fell off the bone, and was super easy to shred. It tasted delicious, but that second go around with the squash was even better. I made five meals from six thighs and four zucchini so there are my lunches for most of next week! Thanks for such an easy recipe that tastes great!
