    How much salt do you add? Would a salt measurement need to be different if it was kosher salt or ground salt? Do you have a written recipe to follow somewhere, even if it isn't exact?

    I must have had a super Turkey for thanksgiving,because after cooking at 350 for 4 hours,and at 200 for another 4 hours,I got this huge bowl of liquid that turned into a solid gelatinous mass of collagen,I've simmered bones for 2 days and didn't no where near teh amount,and quality as what came from this turkey in that short amount of time.

    In my country in northern Italy we have always cooked some meat for many hours so as not to throw away the leftovers, I think it's the least we can do to save our poor Earth.
