Here's how I made my cottage cheese queso, but have fun with it, you could add Rotel too!
I used 1 container of cottage cheese, 1 small can of diced green chilis, blended those together, cooked the ground beef, added some Redmond Chili lime and Redmond Taco seasoning (just eyeballed it) and mixed the cottage cheese mixture in…then added a couple handfuls of shredded cheese. Mix well and enjoy! Andy loved it the next day too!
