Chef John, I'm glad to hear that you recognize the quality of Canadian ballet performances. I don't know where these other fellows got the idea that the specific type of dance performance was related to strip clubs but I know better. Was it the Nutcracker you went to see?

seems pretty authentic to me , i could smell the beer and tarte au sucre for desert …..but no cayenne of course , and celery was too expensive so i think diced carrots may have been included

All spice and ground cloves are absolutely essential in a tourtière. In my family we do our tourtieres with ground pork instead of beef but still I find that you knocked that one out of the park. Cheers from Quebec!

I realize this is an older episode but that is one fine looking Montreal tourtiere! 😋 IMHO adding ketchup is a travesty (but a bit of HP sauce is the way to go😁

Thank you so much for your excellent job explaining every detail of making this wonderful pie. Although I do have a great deal of difficulty listening to you with your constant inflections while you are speaking. it would have been also nice if you told us how much of each spice to use. Thank you.

Tourtiere is our xmas Eve tradition. We have it with a muesli salad with toasted walnuts and warmed herbed panko coated goat cheese slices. The maple balsamic dressing on the greens shouts…..we love Canada and our food and pairs perfectly with the pie and a glass of red 🍷.

My nana's Tourtiere was always one of the best things at our annual Christmas potluck–I had no idea there was potatoes mixed in with the meat! I always wondered why it was so moist and delicious. I'm sure mine will never beat my nana's but I'm excited to give it a go.
