    Harper, stop "fixing" Eva's English and accent. Half of her charm is the unique accent and "mistakes". Some of us enjoy it. Don't ruin it for us. Sofia Vergara is popular for her accent. Don't ruin Eva. Eva is perfect as she is stop Muricanising her. Love her as she is, Italian. Don't make her something she isn't. She loses street cred it her English becomes "perfect". It would also be good for the channel and her as your brand. Don't make her less Italian.

    I don’t care I will make pasta in the smallest amount of water I can no matter what. Boils faster, requires less salt, makes the pasta water more starchy for building sauces. It’s better this way

    I love watching y’all! Miss my great grandma… where can I get a pasta Grammer apron and shirt? Hey, chiapino… what’s your take? My Great Grandpa and Great Uncle were Sicilian fisherman who would sell to our Allioto cousins and they would make this seafood stew. They closed during the last phase of the Pandemic… it’s time to go back to our roots. Come to San Francisco and manjia! Bon a petit!

    My first wife did the pour the cold sauce out of the jar onto the noodles. I couldn't believe it and I'm not even Italian. It was so nasty and it never actually warmed up.

    I grew up with my mom making spaghetti with meat sauce scooped on top. I know better now, but as a kid that was my version of Italian food in southern Maine. 😏

    My wife and I don’t do much better now, but we do add the meat sauce to the pot instead of just on top. I still haven’t tried reheating it other than in the microwave for lunch, and it definitely loses a lot of integrity that way. I have also found that macaroni noodles are better for leftovers in this situation. We call it American chop suey.

    I either get the pasta Mollisana because it’s made from copper die, or I make it myself. I also cooked in Italian restaurants. Real ones then I worked in Olive Garden they used to get mad at the trash talk I used to say. Olive oil in the pasta water or put it on it it makes the pasta spoil and get rancid. The salt in the water means natural flavor in the sauce . People keep your stereotypes and actually learn about the culture/cuisine. Cooking is natural for me so I can easily do it✌🏾

    I want to tell you a story my father used to tell about his time in the US Coast Guard during WWII. One Thanksgiving an Italian-American shipmate invited him home for Thanksgiving. They served spaghetti, and my father, a bit disappointed but having grown up through the depression, would never question what food was being served to him. So he just assumed that's all they were eating, and filled up on it. After he was full and satisfied, they brought out two big turkeys with all the trimmings.

    On mistake #1, I also found La Molisana (2:51) almost a year ago for .88 cents each at that same chain. I bought 12 spaghetti and 12 penne. I've given some away, and still have some left, great pasta! Great Video too!!

    I have always cooked my pasta, drained it, added butter and then poured sauce over it. Next time I will try adding the pasta directly to the simmering sauce. My sauce is a simple one of crushed tomatoes, basil and garlic.

    There was no mentioning of rinsing pasta. Generally, it is not a good idea except when making baked ziti to help prevent it from gluing itself too much.

    I have an ancient enameled cast iron pot in which I love to reheat left-over pasta. I always add a little extra something to it (cheese, olive oil, Calabrian chili) so it's…almost…al forno, LOL. I love the crunchy bits on the edges and the top. It's wrong. I know it is. But I can't help it. Do I need therapy?
