Its Thailand that is still mainly GF. And Japan leans more that way. But Korea and China have eased wheat into products too just like u.s.
(I can't speak for Cambodian or filipino food since over ten years now, but i'ld look in that direction too. I know glass noodles with roasted pork is one of my all time favorite foods ever😍).
