The point is for me in this case is, that this 2 have a totally different CHARACTERS.
    – PHO which you present in this video is quite "rich" when compared to the original, the broth looks too dark and thick while normal PHO has a character of more likely "light" and "elegant", still, with full of flavor. It's a soup that you could have 2 at a time without being bored or fed up. Besides, one important point to compare is the ingredient, almost everything is an all-day cheap ingredient. What really makes the difference is just the wonderful combination and skillfully crafting in cooking art.
    – TONKOTSU RAMEN this look very creamy and… rich rich rich and so mouthering. But I bet you could have 2 at once without feeling too fed up. Besides, many ingredients are too expensive and hard to find, which makes it even a "once in 2 months" meal to cook while PHO can be just an everyday meal.

Conclusion: good RAMEN requires many (expensive) flavor layers, much work, crafting, time, and so on… while good PHO requires nothing too much except a little bit of cooking skill but still brings out an outstanding n healthy meals.
