That was great except for watching that guy struggle with a fork and knife , trying to get a bite.

Just a suggestion but why not brown the pork with no olive oil to render out the fat then continue the recipe as normal, that way you will save the calories and there will be extra crispies for the stock? Great recipe all the same

The total time from start to finish should be about 8-9 hours. The meat should be so thoroughly cooked that with the onions they meld with no chunks.
