Frying turkeys is about the funnest thing to do. I started innocently 25 years ago. It didn't make sense to buy $20 of peanut oil for one bird so I asked my neighbors if they would like me to do one for them. The first year I did 7, the 2nd year I did 20, by the 3rd year I got my brothers involved. Now we do close to 120 for Thanksgiving, 120 for Christmas, and 120 for New Year (Not to mention various charity events). We've even been on the local news for it. If you bring the bird we will fry it. We have multiple fryers and we only charge a 12 pack of beer per turkey. We have it down to a science and we get to walk away after clean-up with a truckload of beer.
On a turkey frying day I'm like a kid on Christmas morning. I wake up at 5 a.m. and can't get back to sleep. I can't wait until 8 a.m. so we can start frying. My 3 brothers feel the same way. Guests come and have a few drinks while we do their bird then take it home secured in aluminum foil, while more guests show up to do the same. You are welcome to stay all day if you like (and many do). It really is a ton of fun. Everyone that knows us somehow has a connection with the other guests even if they've never met. It is a laugh riot!! We accidently created the best backyard party ever! Can you tell how excited I am?

Why the garbage bag? I would think when submerging the turkey in the bag the water won't fill the inside cavity which can offset the level of oil. I never use a bag when measuring. All that said, smoked, then deep fried? Genius!

Great job,for you turkey fryer rookies please do the turkey water drop,a bigger turkey takes less oil than a smaller turkey due to the displacement and you may experience up to a couple inches of boil growth due to moisture when dropping.Had six fryers at one time and did up to 20-25 fried turkeys a year, now I use a commercial broaster ,for those who don’t know that’s just a sealed pressurized deep fryer, that I picked up cheap at an auction. The broaster just stepped it up a notch over deep frying. Will be smoking several on my Recteq 700 smoker, may have to try this method on one of mine.❤️🔥🦃👍
