    Matt's Show Notes:
    1. That's a great meatball recipe!
    2. I always sautee onion, and sometimes add a little red bell pepper when making meatballs.
    3. I rarely follow even my own recipes. I agree, it's a guideline to go by.
    4. Gotta do the 3 meat blend.
    5. Please make your own ricotta. It's super easy, and immensely better. I have a video on my channel on how to do it.
    6. I always let that crust build. Best way to get no sticking to the griddle or the spatula.
    7. Love the 2 cheese mix.
    8. Always go with the fresh herbs. Sorry about your first basil, that didn't look good๐Ÿ˜‚
    9. I'll conclude. These looked absolutely perfect. I love your breakdown of not having the same ingredients as the recipe. Those sliders? I'd eat a whole platter! As always, excellent work!

Exceptional late night griddle lesson. Grabbing the recipe now. I like this one, kinda an all around table offering. Your recipe combination for making the meatballs adds a great taste expansion to an old favorite, and your right, gandma would have popped you if you asked about gloves. She would say she did wash her hands, this mornin.

Been trying for almost 30 years to perfect Nonaโ€™s meatball recipe. I added nearly stale bread and the sautรฉed chopped onions about 5 tears ago and the family says Iโ€™ve done it. Oh and freshly grated cheese is a must. No to makes sliders instead of subs. Thanks.

When I was young and lived in Denver, most of the local Italian restaurants made a sandwich like that, but on a hoagie roll. The interesting addition was always a roasted hatch green Chile.

Aren't you glad you are now into grating your own, real, cheese?
My Italian born and raised mother never, as in NEVER, wore gloves when cooking anything.
We may need to change Amy's nickname from Microwave Queen to Mozzarella Mama after that bite.๐Ÿคฃ
