    I make these just without the corn, and using seasoned breadcrumbs. Also I learned from a old school Sicilian grandma to take the leftover breadcrumbs, and eggs mix together add some parmesan/pecorino then fry in olive oil. Back then nothing went to waste. It's pretty good 👍 Thank you for sharing your version of potato croquettes!

    I did not care for the Kewpie Mayo, BUT I did rinse out the emptied squeeze bottles (a real pain in the * chore) and they made great cruets for other stuff — green taco sauce works perfectly in there.

    Made these as a “breakfast for dinner” side tonight, minus the corn! Added old bay seasoning to the batter, and olive oil + butter in the pan instead of veg oil. I also flattened them a little more and dipped in ketchup. Yummm! Thank you for sharing ❤

    That is a perfect dinner to me! I'm writing a grocery list for this weekend and adding canned corn for sure so I can make these, loooove this idea! Also thank you for showing how you made one batch and the results and how you changed the next batch, it's such a great learning experience. I used to make fried goat cheese like this with salad but this is even more cozy. Thank you so much for sharing your amazing recipes with us 🙂

    These look amazing. But I wish you would use the right stirring utensil. Also, sometimes you need to use a stronger mix. You are not the only one that does this. Many food centric sites frustrate me with this same issue.
